"6 years before we opened in 2011, I started accumulating old pine and tore down an old house because I wanted it to look old. It took me 6 years to put it together as a self made entrepreneur with my personal income flow. Most of the original decor I have accumulated over the course of my life. 1/4 of it was donated from patrons of Hillbillyz. I built Hillbillyz as a retirement project for me and my wife, Anne, and it just grew and grew and grew - that soon I realized it was no longer a retirement project anymore. We were in business 11 years until the fire on October 25, 2022. I believe that the fire was a lightning strike the night before and it took until the next day to ignite. Hillbillyz 2.0 is aimed to be an inclusive destination in the Texas hill country." - Billy Lieck
This is one of my favorite watering holes between San Antonio and Fredericksburg. Back porch has a nice view into the hills and a little spring fed lake. Lots of parking, biker friendly, good beer and friendly folks!
Open air hill country bar with the best brisket nachos i have found. Ole Hillbilly himself is pretty cool too. We riding the hills of Kendalia when my partner-n-crime noticed his fuel gauge. …
"Nice place, the owner gave us an excellent service "Cold beer and BBQ with the nicest waitress, Kim is the sweetest." "Homemade meals and antique decor makes Hillbillyz a unique experience."
Great Place! We've stopped here for years while riding motorcycles in the Hill Country. So sad it burned down recently. Praying for a Phoenix to rise from the ashes and keep Hillbillyz going for many more years!
What a great find. Definitely a locals hangout but don’t let that deter you. Wife and I just happen to come across it and stayed for BBQ, cold beer and friendly owner and staff. Go out of your way to find this hide out. **Update**. We keep coming back as we bought some land close by. Just an amazing place.
Best place I could imagine for a bite to eat and a beer in the middle of somewhere, and the staff is as hometown as it gets. Absolutely love every bit of it.
